View Full Version : TX Trout - Just came back from fishing

Hey guys so I finally had the chance to go fishing yesterday. Well I came back with some speckled trout and a mangrove snapper. The biggest was 20in and smallest 15in. Nothing major I just wanted to share it with you guys. I bet they would make a great soup!!:rolleyes:

Very nice. I think with the trout I would go with a pan fry with a little butter and some pine nuts.

My favourite trout recipie is pan fried in a cast-iron pan over a campfire, with a bit of butter and a hint of lemon.

Essential is the trout: so fresh it curls in the pan when cooked! :w00t:

I actually like to place the fish in foil with real butter and webbers lemon pepper. I let that slowly cook on a frying pan. Once thats ready Ill serve it up with some some lemon wedges, a ripe avocado. If I had caught blue crab I would also have some nice lump meat on the avocado. Sometimes an assortment of veggies, like snow peas or good ol steamed broccoli on the side.

I stole a great recipe from my favorite restaurant. It's a compound butter with capers, anchovies and black pepper.

I have used it on sockeye salmon and steelhead trout. I grill fillets skin-side down over medium heat for about 15 minutes--just enough to cook the meat through and melt the butter on top. The meat lifts off of the skin and it's delicious.

Try the avocado halved and fill the space left by the pit with a spoonful of sour cream and a spoonful of salmon eggs. A nice way to build anticipation for the seafood to come!

Nice catch! The "specks" bring back so many memories of my fishing weekends in the Galveston/Crystal Beach area. Wade fishing or on a boat or pier/jetty?

This is how I usually do it too...a Canadian thing perhaps? :redface:
