Shaving the Chin

In the videos I've watched I've seen different people use different methods for shaving the chin area.

Some use a N-S route with short strokes to get the curved area of the chin.

Other I've seen use a more NE-SW or even maybe closer to an E-W and W-E type pattern.

Is this a matter of preference / the direction of one's beard growth or is one technique correct and the other incorrect?

You use what works for you.
 
In my case I find a direct N-S is the best route for the first pass, then roughly perpendicular to that on the second. This is what works well for me, with my grain pattern and the majority of my straights.
